WHO ARE SALT PIG?
Salt pig are an artisan charcuterie producer based in
the heart of the Cotswolds. They are all about
charcuterie – the preparation & preservation of meats
which came about years ago to get around the lack of
refrigeration.
COTSWOLD ‘NDUJA?
‘Nduja is a soft, spreadable Italian (by origin) salami that
packs a smoky and spicy punch. It’s ability to soften and
melt when heated makes it an epic pizza topping. Ben makes his Salt pig Cotswold ‘Nduja with his rare breed pork and even uses chillies from Oxfordshire Chilli Garden near Witney making this a proper British ‘Nduja!
THE PIZZA
This pizza follows our Dodo roots of keeping things simple. There are three ingredients marrying in perfect harmony here. You’ve got the Sweetness of the Roast yellow cherry tomatoes, then the heat from the spicy ‘Nduja and the cooling creaminess from the buffalo mozzarella. Put this together on our ‘Neapolitan dough with a little crushed tomato & fresh basil and boom!
